About this bonbon
Raspberry Rose is made with BC raspberries and Damask rose oil — the same variety used in perfumery, not the synthetic rose flavour you'll find in most chocolate. The shell is 70% Madagascar dark chocolate, which has enough fruit acidity to carry the raspberry without competing with it. The filling is a raspberry ganache with a hint of rose that stays in the background, not overwhelming.
Each bonbon takes four days. We temper the chocolate, mould the shells, fill them the next day, then close and paint on the third. The fourth day is rest, so the chocolate can stabilise before we ship.
Storage: keep at 16-18°C, eat within 2 weeks of delivery. Don't refrigerate.
Ingredients
Dark chocolate (cocoa mass, cocoa butter, sugar, soy lecithin, vanilla) — 70% cacao minimum. Raspberry filling (BC raspberry purée, glucose syrup, sugar, Damask rose oil, pectin). Decoration (coloured cocoa butter, freeze-dried raspberry).
Allergens: contains soy. Made in a facility that also handles milk, tree nuts, peanuts, and wheat.
Dietary: vegetarian, vegan, dairy-free. Not gluten-free (made in a shared facility).
Tasting notes & pairings
On the nose: bright raspberry, a faint floral note from the rose.
On the palate: dark chocolate opens it, then the raspberry comes in bright and tart, with the rose slipping in at the end for a clean, floral finish.
Drink with: a glass of Brachetto d'Acqui (sweet sparkling red), a dry rosé, or a glass of cold sparkling water with a squeeze of lemon.
Best moment: as a Valentine's treat, or after a light summer dinner.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
