About this truffle
Espresso Truffle is made with fresh espresso pulled from a local Toronto roaster — not instant coffee, not espresso powder. The coffee goes into a mascarpone and dark chocolate ganache while it's still warm, so it infuses properly. The shell is 70% Madagascar dark chocolate — fruity and bright, which cuts through the richness of the mascarpone.
Each truffle takes three days. We temper the chocolate, blend the ganache warm, fill and roll on the second day. Third day is rest and packaging.
Storage: keep at 16-18°C, eat within 2 weeks. Don't refrigerate.
Ingredients
Dark chocolate (cocoa mass, cocoa butter, sugar, soy lecithin, vanilla) — 70% cacao minimum. Espresso mascarpone ganache (mascarpone, fresh espresso, glucose syrup, sugar, butter). Decoration (coloured cocoa butter, ground espresso).
Allergens: contains milk and soy. Made in a facility that also handles tree nuts, peanuts, and wheat.
Dietary: vegetarian. Not vegan, not gluten-free.
Tasting notes & pairings
On the nose: fresh espresso, dark roast, a hint of cocoa.
On the palate: the mascarpone makes it rich and almost whipped, then the espresso hits — bitter, bright, long finish.
Drink with: a double espresso (obviously), a glass of Vin Santo, or a cold glass of whole milk. Goes well with dark chocolate on the side.
Best moment: after dinner, with a small glass of something strong.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
