About this truffle

Espresso Truffle is made with fresh espresso pulled from a local Toronto roaster — not instant coffee, not espresso powder. The coffee goes into a mascarpone and dark chocolate ganache while it's still warm, so it infuses properly. The shell is 70% Madagascar dark chocolate — fruity and bright, which cuts through the richness of the mascarpone.

Each truffle takes three days. We temper the chocolate, blend the ganache warm, fill and roll on the second day. Third day is rest and packaging.

Storage: keep at 16-18°C, eat within 2 weeks. Don't refrigerate.
