About this bonbon
Cardamom is the bonbon that converted people who said they didn't like dark chocolate. The shell is 65% dark chocolate — softer and rounder than our usual, with less bitterness so the cardamom can lead. We crack and grind green cardamom pods fresh every morning in the studio; no pre-ground powder, no shortcuts. The brown butter filling is cooked until nutty and fragrant, then folded with the fresh cardamom.
Each bonbon takes four days. We temper the chocolate, mould the shells, fill them the next day, then close and paint on the third. The fourth day is rest, so the chocolate can stabilise before we ship.
Storage: keep at 16-18°C, eat within 3 weeks of delivery. Don't refrigerate.
Ingredients
Dark chocolate (cocoa mass, cocoa butter, sugar, soy lecithin, vanilla) — 65% cacao minimum. Cardamom filling (brown butter, glucose syrup, sugar, fresh green cardamom, cream). Decoration (coloured cocoa butter, ground cardamom).
Allergens: contains milk and soy. Made in a facility that also handles tree nuts, peanuts, and wheat.
Dietary: vegetarian. Not vegan, not gluten-free.
Tasting notes & pairings
On the nose: floral, green, a hit of warm spice from the cardamom.
On the palate: the chocolate is soft and round, then the cardamom comes in warm and floral, with the brown butter giving it body.
Drink with: a Masala chai, a glass of warm oat milk, or a light Gewürztraminer. Don't pair with coffee — the cardamom overwhelms it.
Best moment: after a meal, with something warm.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
