About this bonbon
Pistachio is made with Bronte pistachios from the slopes of Mount Etna — the green, fragrant, slightly bitter variety that nobody else in Toronto uses. We roast and stone-grind them in-house, then fold the paste into a white chocolate ganache that's just sweet enough to let the pistachio lead. The shell is painted with a pale green and white pattern; no artificial colours.
Each bonbon takes four days. We temper the chocolate, mould the shells, fill them the next day, then close and hand-paint on the third. The fourth day is rest, so the chocolate can stabilise before we ship.
Storage: keep at 16-18°C, eat within 2 weeks of delivery. Don't refrigerate.
Ingredients
White chocolate (cocoa butter, sugar, milk powder, soy lecithin, vanilla). Pistachio paste (Bronte pistachios, glucose syrup, sugar, rapeseed oil, sea salt). Decoration (coloured cocoa butter, chopped pistachio).
Allergens: contains milk, soy, and tree nuts (pistachio). Made in a facility that also handles peanuts and wheat.
Dietary: vegetarian. Not vegan, not gluten-free.
Tasting notes & pairings
On the nose: toasted nuts, a subtle floral note from the pistachio.
On the palate: white chocolate is sweet and creamy, then the pistachio comes in with its characteristic bitter finish — more complex than it sounds.
Drink with: a glass of Moscato d'Asti, a cold brew tea, or a glass of whole milk. Goes well with fresh figs or dried apricots.
Best moment: as a finishing piece after a light meal.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
