About this bonbon
Matcha is made with ceremonial-grade Uji matcha from Kyoto — the same quality you'd use for a tea ceremony, not the culinary grade you find in most chocolate. We fold it into a white chocolate ganache that's creamy but not cloying, so the matcha can be the lead. The shell is painted in pale green and white. The flavour is vegetal, slightly bitter, distinctly matcha — not sweet.
Each bonbon takes four days. We temper the white chocolate, mould the shells, fill them the next day, then close and paint on the third. The fourth day is rest, so the chocolate can stabilise before we ship.
Storage: keep at 16-18°C, eat within 2 weeks of delivery. Don't refrigerate.
Ingredients
White chocolate (cocoa butter, sugar, milk powder, soy lecithin, vanilla). Matcha ganache (ceremonial-grade Uji matcha, glucose syrup, cream, butter). Decoration (coloured cocoa butter, matcha powder).
Allergens: contains milk and soy. Made in a facility that also handles tree nuts, peanuts, and wheat.
Dietary: vegetarian. Not vegan, not gluten-free.
Tasting notes & pairings
On the nose: vegetal, grassy, a clean green note from the matcha.
On the palate: white chocolate is sweet and round, then the matcha cuts in — bitter, vegetal, with a long finish that lingers clean.
Drink with: a bowl of matcha (yes, really), a glass of cold sparkling water, or a light sencha tea. Don't pair with coffee — it'll overwhelm the matcha.
Best moment: as a palate cleanser between courses, or mid-afternoon with a cup of tea.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
