About this bonbon
Almond Marzipan is made from blanched Spanish almonds — not the sweet, pastey kind you find in mass-produced chocolates. We roast them whole, then blend with just enough sugar and almond oil to create a paste that's bitter, fragrant, and distinctly almond. The ganache sits inside a 64% dark chocolate shell with a painted gold and brown pattern on top.
Each bonbon takes four days. We temper the chocolate, mould the shells, fill them the next day, then close and paint on the third. The fourth day is rest, so the chocolate can stabilise before we ship.
Storage: keep at 16-18°C, eat within 2 weeks of delivery. Don't refrigerate.
Ingredients
Dark chocolate (cocoa mass, cocoa butter, sugar, soy lecithin, vanilla) — 64% cacao minimum. Almond marzipan (Spanish almonds, glucose syrup, sugar). Decoration (coloured cocoa butter, gold lustre).
Allergens: contains soy and tree nuts (almonds). Made in a facility that also handles milk, peanuts, and wheat.
Dietary: vegetarian. Not vegan, not gluten-free.
Tasting notes & pairings
On the nose: roasted almond, a faint warmth from the cocoa.
On the palate: dark chocolate first, then the marzipan floods in — bitter, dense, with a long nutty finish.
Drink with: a small glass of Amaretto, a double espresso, or a glass of dry Marsala. Goes well with dried figs or roasted hazelnuts.
Best moment: after dinner with something sweet.

Best caramel in the city
I have tried every chocolatier in Toronto and Aline's salted caramel is genuinely the best. The chocolate is dark and serious, the caramel is the real deal (not too sweet, proper buttery depth), and the salt is the right amount. Worth every penny.

Almost perfect, just a touch sweet for me
Beautiful bonbon, the salt really does make a difference. Personally I find the caramel a touch on the sweet side — would love to see a 70% version. But the quality is undeniable and the hand-painted design is gorgeous.
