A bonbon takes four days. That's the point.
Most chocolate is made in an afternoon. Ours isn't. Each bonbon starts with a single-origin cocoa shell, gets filled with whatever Aline is obsessing over that week — salted caramel from Normandy, sour cherry from BC, a cardamom ganache that took 11 tries to get right — and is finished with a hand-painted design that's different on every piece.
No two are the same. None of it is rushed.
